Organic recipe of the week – beef in cherry tomatoes

This weeks’ recipe comes from Manna Organic Store in Tralee, Claire says this is a great recipe to use particularly when tomatoes are in season and you have a bit of a glut of them in your garden, a nice alternative to chutney!

Organic Beef in Cherry Tomatoes

Beef in cherry tomatoesOrganic ingredients:
• 400g diced beef, chopped into bite-size pieces
• Coconut oil or frying oil of your choice
• 3 medium red onions, peeled and chopped.
• 4-5 cloves of garlic, peeled and grated/crushed
• 1-2 tsp turmeric, ground
• ¼ tsp cloves, ground
• ½ tsp cinnamon, ground
• ½ tsp cardamom, ground
• ½ tsp salt, rock or sea
• ½ tsp crushed peppercorns
• 1 sweet red pepper, washed and thinly sliced
• 1.5 Kg very ripe sweet cherry tomatoes, halved

Method:
Fry the meat in the oil until browned on all sides, remove from the pan and reserve. Fry the chopped onions in the same oil until translucent. When the onions are softened add the grated garlic, and the spices. Stir well for one minute until you can smell the spices. Add the tomatoes and their juices and stir well bringing up all the spices into the juice. Bring to a gentle boil, and stir for a minute. Reduce heat and simmer until the tomatoes start to cook – about ten minutes. Add the meat back in and continue to cook for another 10-15 minutes, until you are sure the meat is fully cooked (depends on the size of the cubes). Serve hot with potatoes wedges, hot crusty bread, or mashed potatoes.
This meal can also be cooked in a slow cooker on low for 8-10 hours. You can add some extra water if you feel that the meal is not liquid enough to be left in the slow cooker for that length of time.
